I love making oatmeal bake recipes because they are so easy and perfect for the family or even if you have some company!
So I actually made this for my husband’s army crew that came back from a training recently and it was a hit! My kids even loved it and I have to be honest, they get a little picky when it comes to oatmeal recipes because they love the oatmeal in a packet!
PEANUT BUTTER OATMEAL BAKE
1 ½ cups quick cooking oats
1 tsp baking powder
½ tsp sea salt or Himalayan salt
1 tsp ground cinnamon
2 overripe bananas, mashed
¼ cup creamy peanut butter (melted in microwave for 30 sec)
1 tsp vanilla extract
¼ cup pure maple syrup
1 large egg, lightly beaten
¾ cup unsweetened, vanilla almond milk or Fair life milk
¼ cup creamy natural peanut butter, melted
Preheat oven to 350 degrees F. Grease a 9×9” square baking pan and set aside.
In a small bowl mix together the quick cooking oats, baking powder, salt and ground cinnamon. Set aside.
In a large bowl mix mashed banana and peanut butter together until combined.
Add in the vanilla extract, maple syrup and egg. Mix until combined.
Add the milk and stir..
Add dry ingredients to wet ingredients and mix thoroughly.
Pour the mixture into a lightly greased 9×9” baking pan.
Melt the extra peanut butter and drizzle on top. I use a knife to make swirls for extra decoration on top!
Bake at 350 degrees for 25 minutes. Or until the top slightly springs back when touched and the edges are just barely brown!
Cool before digging in! ENJOY!!
This recipe is great to have re heated or even to eat cold!!
My hubby and I were making a meal plan for the week and were thinking of different recipes that we can have as a family! My hubs suggested I make “Dirty Red Beans and Rice”…. and I had NO idea what this was… so I did some research and it sounded pretty interesting! I found a recipe and then hubs decided to add something else.. Kielbasa!! So we went for it, and it turned out really really good!!!
Hope you guys can make this and enjoy it yourself!
1 tbsp extra virgin olive oil
1/2 white or purple onion, diced
1 red bell pepper, diced
1 cup brown rice cooked according to package
1 package of turkey Kielbasa (chopped)
1 tbsp cajun seasoning
1 tsp garlic salt
1 cup tomato sauce
2 cups chicken broth
1 (15oz.) can kidney beans, rinsed and drained
Heat the olive oil in a large skillet over medium high heat. Cook Kielbasa for approx. 5 min or untilslightly brown on each side. Set aside
Sauté the onion and red bell pepper for about 2 to 3 minutes, until they soften slightly.
Add the rice, cajun seasoning and garlic powder, stirring until the rice is slightly browned, about 2 minutes.
Pour in the tomato sauce and chicken broth and stir until combined. Bring mixture to a slight boil. Add beans, stir, then reduce heat to low. Cover the skillet and cook for 15 minutes, or until rice is tender. Stir to fluff the rice. Serve warm. Enjoy!
Hey everyone, happy Monday!!! Hope you all had a wonderful weekend and are ready to get back to the grind!!
If you haven’t followed my journey yet, I’ll give you a little background!! I have 2 boys ages 6 and 4, and 3 bonus kids ages 9, 7, and 4…. and my husband and I are expecting our first baby TOGETHER to add to our blended family of 8! We are so thrilled that God has blessed us and our story has been quite a story!!
My husband and I met not too long ago… back in August of this past year, got engaged just 4 months later, and got married in Feb (just 6 months later of meeting)… and 1 month after marriage, Brent was able to move to PA with me and then it happened… expecting baby #6! Although many think its fast (which we won’t deny it is), we would not have it any other way!! We are completely content with our choices, our relationship, and our lives!
So now we are so excited to share our pregnancy together over the next 8 months! Currently, we are 9 weeks pregnant and will be 10 weeks on Thursday! Due date is Dec 21st, although I went 2 weeks early with both of my boys, so that may just happen again!
My goal for this pregnancy is to be as healthy as possible! I gained 60 lbs with both my boys and I do not want that to happen again! So, my health is my priority so I am healthy for the baby, and feel good as well… The healthier and active you are, usually the better the pregnancy and delivery!
I made a meal plan for this week and I have a workout plan and I’m ready to go! Now with my workouts, I am taking it easy because I have a sub-chorionic bleed, so I am restricted from heavy lifting, jumping, etc.. But I love my yoga, so that will be incorporated, along with jogging, and light weights!!
So here is my meal plan for the week! Keeping this week lower on carbs, higher with protein and fats. My body has done really well with this and I know gluten makes me feel bloated so if I can stay away a little, I am good! You will see in my meal plan, I AM using Shakeology, which is our superfood shake that is full of dense nutrition… This is something that has helped me so much with my nutrition and has helped with my cravings, bloating, digestion, and energy and I have been continuing to use it daily since finding out I was expecting and plan to use it my entire pregnancy! It is recommended if you question it, that you talk to your OB/GYN, but mine actually use it and are happy with the ingredients and I just need a folic acid in addition to my Shakeology and that takes care of my pre natal vitamin! When people ask me if its safe, I usually respond with: If you are willing to put fast food in your mouth, soda, or other chemicals in many foods, Im thinking a healthy superfood shake won’t hurt!!
My water intake will be a gallon a day… well thats my goal and I’ve been doing pretty good with it when I add lemon and fresh berries to spice things up!! lol
For my workouts, PiYO will be my program! I love my yoga, so this is a yoga/pilates type workout that will help me with my strength and flexibility! I was in Beachbody’s test group when it first came out and had great results!

The craziest thing I hear so many times recently is “Go get a real job.” Or “Oh, that Beachbody scam she does can’t possibly be a career.” Those people who are saying this to me, or hoping I would hear it… I am happily going to educate you on what I do so no one is confused and making these misconceptions about my career as a work from home mom and fitness coach.
4 years ago before starting this whole crazy Beachbody Coach gig, I was a full time ER Nurse. I absolutely loved what I did as a nurse, but 2 years ago, I quit nursing to stay home with my boys and work from home while still being able to fulfill my passion for helping others. But instead of helping people in the hospital, I was then helping people stay out of the hospital and preventing them from acute and chronic illness such as Diabetes (one of the worst diseases killing millions of people), cancer, obesity, heart disease, and more.
Since working from home and running my own fitness business, I have gained so much from life, than many with “real jobs” never get a chance to even experience… maybe thats why they don’t call what I do a real job??
Possible reasons why I am getting questioned about what I do:
I sell products off a website
I build a team which helps my long term income and stability
I don’t clock in and out at a building with a name on it
I don’t wear a uniform to work or have certain attire that is required daily
I don’t have a boss to tell me what to do
I run my business through social media and talk to people all over the US and Canada (and soon to be international)
I didn’t have to go to college for this education or have a certain experience/training before starting
Some of my trainings and trips I attend as a coach are at resorts, vacation spots, and I’m having a blast doing it
These reasons are absolutely reasons to question what I do! We are all entitled to our own opinion and have the right to be skeptical and curious!!! Which is WHY I am going to answer ALL these concerns!
I do sell products off a site! I sell products that have changed MY life and my family’s and friends! They were my guinea pigs first along with myself to see if these products actually worked! What I have found is answers to many people’s questions and complaints about a healthy lifestyle! I found workouts with real certified trainers like the 21 Day Fix, Hammer and Chisel, and Core De Force, that help you get through a real workout. In these programs, you get nutrition plans with recipes to help you eat healthy for you and your family! You also get to calculate your caloric intake and figure out what you should be eating each day according to YOU and your lifestyle and goals. Oh, and that Shakeology stuff…. yes, thats real too! I have not found ANY other meal replacement shake that gives me the energy, helps my digestion and bloating, and gives me the nutrients and superfoods that Shakeology does. This isn’t for everyone either, this is for people who go for quality for their health and who want to live a healthy lifestyle the right way… working hard, exercising, healthy eating, and getting support, motivation, health and fitness tips from me as their coach! NO wraps, diet pills, patches, nothing temporary that could possibly be called a scam or bad products that don’t work! The only way it doesn’t work is if you stop trying! So I do sell products that are life changing, and I also sell health and happiness!
I build a team which helps my long-term income. No, this is NOT a pyramid scheme and I do NOT make money from the people below me… If I am not working, people who signed up after me can pass me up and make more income than myself! How this does work though, is when you find other like-minded people who are ready to hustle and change lives, you are all building a team and helping others which builds volume, which leads to long term income that doesn’t disappear just because you don’t “sell” something that day or week. As I build a team, I do less “selling” and more training to help my coaches to become successful themselves in running challenge groups to help people along their fitness journey! I was able to triple my nursing salary when I actually quit nursing to work full time as a Beachbody coach, and I don’t know about you, but income is income and either way, that is food on my kids table and a roof over their head! I, just like others with a real job have been able to pay off debt, put money away for my children, take my kids on vacations, and have holidays for them without stressing about what is in my bank account… and not everyone with a real job can even say they can do that… I know working as a nurse, I still struggled to get debt paid off and have extra set aside.
I don’t clock in and out of a building with a name or title on it. No, I don’t work at ____ Hospital anymore… I wake up and while my boys are still sleeping, I go downstairs sometimes in my Pj’s and answer a few messages. Then my boys wake up and I get them ready for school and my youngest Wes hangs out with me during the day and we work together, with a little play time in between! I also can take breaks when I need to so I can attend my kids events and sports which has been such a blessing! I do not have a time clock to where I get paid by the hour. I make up my own hours according to what is best for me and my family, and I can work wherever I feel like because my business is worked online! I don’t have to leave my kids.. they watch me help people via computer, phone, and if they are close, my challengers and coaches come over and we workout together, meal prep together, and have fun! I know that doesn’t even seem like a real job… it seems like a dream right?! Well, the beauty of your life is YOU get to pick what you do and where you work! You picked your life and career, and I will be in charge of mine!
I don’t wear a uniform to work. Nope, I mostly wear workout clothes, but sometimes I work in my Pj’s! If I’m on a trip, I even wear a fancy outfit, or a bathing suit! I think my favorite part is the yoga pants though! They are pretty comfy and you can find really cool ones with cute designs!!
I don’t have a boss telling me what to do. Nope.. I am MY OWN BOSS. I answer to myself. I don’t have someone I have to report to for an evaluation for a bonus or raise.. I simply help more people and give myself my own raise! Sounds pretty cool, right?!
I run my business through social media. This might really get people. Like how can you run a real business using social media?!?! Well, it’s something called network marketing and it’s as real as it gets! You have the ability to not be stuck to help people or work with people only in the area you live! You have the ability to help people from all over, make friends from all over, and it’s a pretty wonderful thing! When you limit yourself to a local area, your limiting your success… this is an opportunity for you to change so many lives in so many different locations!! This is also how I share my journey and story so I can find other like-minded moms, military families, and fitness lovers who want to empower other women… because that is my true goal in life!! To empower women and help them see they can be independent, strong, and successful no matter what trials and tribulations they have encountered in their lives!
I didn’t have to go to college or have an education to get my fitness coaching job. Sure didn’t, and that may come off crazy, but it’s not about how much you know, its about how hard your willing to work, how passionate you are about what you do, and how much your willing to learn and experience along the way! As a successful coach, I have my own trainings to help my team grow a successful home business themselves! I teach my team how to brand themselves, how to communicate with potential challengers and teammates, and learning about what Beach body is and what we stand for!
I travel and my trainings are at resorts, vacations spots, and I have fun doing it! The problem with society is we are put in a place that we are suppose to think of a job is being something you hate going to… something you dread… all you who clock in on Mondays who work your 9-5 or swing shifts.. you dread Mondays and the start of another week…. I get it, I’ve been there and done that! But is that really how we should live?? I don’t live in a fantasy world, I live in a world that you should be happy and feel complete with what you do every day, because you spend a lot of your life doing that and you only live once and you better live it to the fullest! So yes, I have fun working, traveling, and spending quality time with my friends that I choose to work with… because I have that ability!
I have the ability to choose this as my career, just as you have the ability to choose your career and your happiness! I hope this whole Beachbody coaching gig makes a little more sense to you now. It’s a real job that can give you real freedom with your family and loved ones, real happiness, and real success!
Again, its not for everyone! Its for people who love to be healthy and want to share their journey along the way, want to make friends and surround themselves around other positive and uplifting people (because we are pretty positive… even in the darkest times we find faith, hope, and a good future), and aren’t afraid to work in yoga pants at any hours of the day you want!

I usually only see my Fiancé once every month since he lives 10 hours away in Maine and I’m hanging out here in Pennsylvania… It’s a slight challenge, but it’s temporary and we both have to continue doing what we need to do to achieve our goals! This is one reason I love this man so much! We understand each other, and support one another with our life goals.. even if it requires us being away from each other for some time.
So even though I saw Brent last weekend and he came to visit, he decided to surprise me again with another visit! Yes, he’s crazy enough to drive 10 hours each way to be with me when he can! We made a weekend out of it for sure! We started off with getting our first fur baby together!! He had a cat prior to us starting our relationship, but now we got our first puppy!! We adopted her from a friend of mine who was looking for a family for her! It worked out perfect because I needed a hypoallergenic doggy that doesn’t shed because of my son Weston’s allergies. She’s def loved so much already! We even took her into Walmart to get groceries.. yea, you can call us the crazy people of Walmart!! LOL! And Yes, Brent is our new “Dog Mom”!
After getting our pup Izzy, we went to visit my mom and soon to be step-dad and went 4 wheeling! We took the side by side and stayed warm and dry while my mom and her boyfriend got wet and cold on the quad!! Never a dull moment with us!
Sunday, we went to downtown Chambersburg to our Ice Fest, and while we were there, Brent finally got to see our venue for our wedding! He has only seen pictures, so this was a nice surprise!
Sunday night pizza, movie, and cuddles!!
What is your favorite kind of pizza? I don’t know about you, but I love my Papa John’s and Stuffed Crust Pizza from Pizza Hut.. but I also know that it has as many calories per slice as I should have in a whole day!! So, it’s time to make some adjustments and make my own version so I am getting my pizza cravings satisfied, but also staying on track with my fitness goals! Because everyone should know you can’t work off a bad diet!
So Brent and I wanted to have pizza, movie, and cuddle night, so we went for making our own pizza! Saving money, calories, and we had a blast making it together! I was going to make a white pizza, but Brent had an awesome idea of adding Kale instead of spinach, which I never have done before! I am always up for trying something new!
Healthy Stuffed Crust Kale Pizza:
1 whole grain pizza crust (I get the Pillsbury roll)
1/2 cup organic pizza sauce
6 light string cheese
3 large tomatoes
2 cups fresh kale
1 cup fresh portobello mushrooms
2 cups shredded 1% mozzarella cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 black pepper
1/2 tsp Himalayan salt (or sea salt)
Pre-heat oven to 350 degrees
Roll out the dough. Place the string cheese side-by-side length wise 1/2 inch from end of dough. Roll the end of dough over top string cheese, so the cheese is covered fully by dough to make crust.
Add sauce to the middle and with a spoon, smooth out sauce so it covers the dough.
Add cheese and spread evenly to cover the pizza (except crust).
Add Kale and spread evenly on pizza.
Add mushrooms, and remaining 4 ingredients to pizza (evenly sprinkling on top of pizza).
Bake for 25 min, or until brown on top.
Let cool before eating!
ENJOY with your favorite salad! Mine of course is the Strawberry Spinach Salad!
Ok, so you really gotta try this recipe!! It’s crazy amazing!!
WHAT ELSE DID PREP FOR THE WEDDING?!
Now, I know this post is a prep for our wedding, so if you really want to know what we got accomplished.. well… we just saw our venue again TOGETHER! One more thing, I got to sit down with our DJ and go over what music we went for each part of the wedding.. I do not know what I would do without her! She’s kinda like my wedding planner!
Other than those 2 things, we didn’t do anything else! I will say this week is going to be BUSY! I need to follow up with everyone we are using for the wedding to help make it special!
Staying Fit For Our Wedding!
As you saw, we made some healthy food, and we also did get some workouts in! We have been doing Core De Force, our home fitness program! It’s nice because we can workout at home, we have a schedule to follow, along with a meal plan! Overall, we had a great week, weekend, and are ready to keep chugging along with our journey! Lots of surprises and unknowns, but we have faith in this process and God has a great plan for us! One day at a time, we will let everything fall into place!
So I am like everyone else with a New Year’s Resolution… but I try to make this more of a lifestyle!!!
One of my resolutions is to maintain a fit and healthy lifestyle and minimizing the cheat meals each week. I do well with my workouts, but my nutrition can easily fall off as many of you can probably relate!
Now that my wedding day is coming right around corner in a little over 5 weeks, it’s time to get serious!
So I started my new regimen last week with Core De Force, which is our home fitness program with Beachbody! Since I am a fitness coach with Beachbody, it is important for me to lead by example and show others what is is like to live a healthy lifestyle! So I incorporate our home fitness programs that are around 30 minutes a day, along with clean eating! One additive we use into our nutrition isShakeology, which is our superfood health shake and is a meal replacement! You cannot find this quality of a shake over the counter and has amazing benefits… hence me using this for over 4 years now!
As I started Core De Force, I also started with the 3 Day Refresh cleanse just to remove the toxins and junk that I put in my body over the holidays! It was a perfect way to get on track with my nutrition and get me in good eating habits!
There is not a huge difference, but I will say the bloating is gone, and I feel lighter!! I am down 3 lbs and 2 inches! My main goal was to get the toxins out of my body and get focused on my nutrition and let go of the cravings… It was a success!
So now the journey continues! I will be drinking my Shakeology daily, eating clean, and getting in my Core De Force workouts 6 days a week! These are the simple keys to success!! It’s not complicated! So many people try to over complicate it with counting calories, diets, points, macros, etc… honestly, its portion control, and making healthy choices!!!
So there you have it! My little secret to reaching those goals that seem sometimes IMPOSSIBLE!
Not only is working out going to help you burn those calories, but during the time of wedding prep, you need to relieve that stress!! Im going to leave you with a little secret about my wedding and engagement!!
My fiancé Brent and I got engaged on Christmas Eve…. we ALMOST went to JP to get married, but decided we wanted our special immediate family and very very close friends there… just a few!! So we set the date of February 18th, 2017! Yes, that is like 8 weeks to plan our wedding!
To take it a little further, since my fiancé lives in Maine, while I’m in PA, I am doing the planning alone. He gets to FaceTime with me, but it isn’t the same! He will not be transferring to PA National Guard until the end of summer!
But we are still having fun planning and getting ready! In the first week of actually planing (that started last week lol), we confirmed our venue, our flowers, and I got my dress! This week so far, we confirmed our photographer, our catering, and still going strong!
So who says they need 1 year to plan?! HAHA! I feel like I should do this as my second career!!

Ok so I need to be honest here… living a healthy lifestyle is NOT always easy for me! My biggest struggles come when I’m emotional, stressed, and going through struggles.. yup, that has been me over the past week. I have fallen off big time, but thank goodness there is something called a new day and a new week to start fresh!! So I’m back at it, but I still want to share with you some ways that I do overcome my struggles with eating, especially at NIGHT!
#1. The first thing you can do is figure out WHAT is triggering your food cravings.
#2. Is there a certain TIME OF DAY that you are triggered more? Example for me is night time when I’m not as busy.
#3. How can you GET RID of those cravings other than completely avoiding what triggers?
Go workout (if it doesn’t keep you up all night)
Eat a healthy alternative
Go brush your teeth
Talk to a friend/family member to keep busy
Read a good book/listen to a good audio
So now lets go more in depth about healthy alternatives. I am sorry, but I feel that I need something in the evening and as long as it is healthy, I am right on track with my goals and where I want to be. One option I do very often is drinking Green Tea and have a rice cake!
Now, I do not always make my rice cakes like this, but I do get creative when I am really in need of a snack!
1 small layer of natural PB
light cool whip (thin layer)
1 tbsp soy free, nut free, and dairy free chocolate chips (from organic section in local grocery store)
unsweetened coconut to top it off (sprinkle)
If you can work hard for 21 days, your body will not physically need what it was craving.. in fact, you saw I just wrote WAS craving… Your body will NOT need the junk because it will be out of your system and it just takes 21 days to create new habits!! Let go of the cravings, and move forward with your goals!
A big part of my success comes from having support and extra motivation in my fitness challenge groups that I hold online (in a closed group on Facebook). We do daily motivation, tips, recipes, and help with meal planning! In our group, we incorporate a fitness program of your choice from Beachbody, along with adding Shakeology into our regimen to help us get the proper nutrition.

I always say, healthy mom/dad, healthy kids!! Our kids do exactly what we do.. they watch every move we make, every step we take!! So it is so important that if we want them to live a long, healthy lifestyle, then we as parents need to promote it too and practice what we preach!!
The more we live out the lifestyle we want for our kids, the more likely they will be to stick to it too!! Just an example, this afternoon for lunch, I was eating with my kids. I am right in the middle of the 3 Day Refresh, a cleanse that consists of Shakeology (a nutritious dense health shake full of natural superfoods, amino acids, pre and probiotics, digestive enzymes, and more to help curb cravings, decrease bloating, and help increase energy and maintain healthy blood sugar levels), Fiber Sweep (contains Chia, ground flax, and psyllium seed husks to help eliminate wastes from your digestive tract), Vanilla fresh (a shake with plant based protein, essential vitamins and minerals, probiotics, and potato protein), and fresh fruits and veggies. As I am getting my food ready, I was thinking what to make them. It would be so easy so cook up some easy macaroni, chicken nuggets, or cereal, but I am really focusing in on giving them the nutrition they need. Don’t get me wrong, I won’t starve my kids of having kid food sometimes, but I feel if I get them in this lifestyle now, they will continue wanting these types of foods! Just as adults.. we eat something for so long, our body wants more right?! Same goes with our kids and giving them healthy food!
So for my kids’ lunch, I figured, I have grilled chicken and green beans made up, lets eat! I do give them their ketchup because we love our condiments!! lol! And to my surprise, they actually asked for more healthy choices! My oldest wanted an apple with peanut butter to go with his lunch, and my youngest wanted his cucumbers with Greek Yogurt Ranch! Thats what I’m talking about!! Proud mama right here!!
So you may be asking, how the heck do you get them to eat like this?!
This is just how I did it, so it may not be your way, but I started by not giving them an option. That simple lol. When they see mommy and daddy are not giving in, they eat if they are hungry! For the first couple times, they said they didn’t like it or want it, but then when they saw mommy wasn’t playing games, they ate it and LOVED it!!
So tip #1. BE CONSISTENT!
#2. Introduce on healthy food at a time. If you do too much at once, it may overwhelm them. So one food at a time!
#3. Give options of how they eat it! For me, I found it helpful to allow condiments and additives to go with the foods.. for instance, the cucumbers with Greek Yogurt Ranch. They dip away, but now I use less condiment and they are still getting in their veggies! I also allow ketchup with their chicken.. because its just good lol!!
#4. MAKE IT FUN!! What kid doesn’t like to have fun with their food?!?! Make shapes out of cucumbers, let them make faces with grapes, apples, and other fruits and veggies… Play time at the table can be fun for us all!!
#5. Give incentives.. Ok so its kinda like bribing, but better lol!! My kids say they don’t want any more food, but they still have a good bit on their plate, I say, 5 more bites and you get a sticker on your sticker chart, or 10 minutes on the iPad today! They love either one, so I alternate! If they do not follow through, I do not reward in any way for them not finishing! No stickers, no iPad!
Ok come on, aren’t they cute though? Totally worth teaching them this healthy lifestyle so they can continue living life happy, fulfilled, and healthy!! It all starts with us though!! Lets keep working hard at leading by example and showing them that being healthy is fun!

3 cups of your FAVORITE fresh berries! I used blueberries and raspberries.
1 tsp Pure maple syrup
In a large bowl, whisk together the eggs, milk, apple sauce, oil, and vanilla.
Beat in whole wheat and all-purpose flour, wheat germ until mixture is smooth.
Preheat waffle iron and spray with PAM or EVOO cooking spray. Pour batter in waffle maker and cook until golden brown on top (or until light says ready lol) 😛
Once waffle is done, place on plate and add your favorite fresh berries (1/2 cup per serving of waffle- 2 triangles)
Drizzle pure maple syrup on top for some extra sweetness! ENJOY!
