Mexican Turkey Burgers

As I am currently obsessed with Mexican food, I figured it would be in my best interest to find a healthy way to eat what I am craving so I can stay on track with my health and fitness goals!

Please, when you see the recipe for the turkey burgers, don’t knock it, til ya try it!! It’s absolutely amazing!!

Kudos to my husband Brent who made this recipe because I never would have thought of it on my own!

Mexican Turkey Burgers

Ingredients:

  • Turkey burger
  • 1/2 small Onion minced
  • 2 eggs
  • 3 cloves garlic minced
  • Pepper to taste
  • Salt to taste
  • 1/4 cup BBQ sauce (I use sugar free C. Hughes)
  • 1 tbsp evoo
  • 1 tsp parsley
  • 1/2 Apple finely chopped (I used red apple)
  • 1/4 cup walnuts finely chopped

Directions:

  1. Pre-heat oven or grill to medium high heat.
  2. Hand mix all ingredients together in medium size mixing bowl.
  3. Make patties the size of your palm of your hand to create proper portion sizes.
  4. Place on sprayed pan (with EVOO or pam) or directly on grill and cook for 8 minutes on each side, or until fully cooked.
  5. Let cool before eating!
  6. Serve with your favorite side salad!

Then add your favorite Mexican toppings!

I used hot pepper cheese, jalepenos, fresh guacamole, and salsa!

Crock Pot Quinoa and Chicken Salsa Casserole

Ingredients:

  • 1 lbs shredded Rotisserie Chicken
  • 2 cups of low sodium Chicken broth (1 cup put off to side)
  • 1 cup uncooked quinoa
  • 1 15 oz. can black beans (rinse before adding in)
  • 1 bag frozen corn (I get steam fresh)
  • 2 cups fresh salsa (or favorite brand)
  • 8 oz. Mexican Cheese blend
  • 5 oz Queso Fresco crumbled
  • 1 tsp ground cumin
  • 1 tsp ground pepper (or cracked)

Additional Toppings of your choice:

  • Greek yogurt (in place of sour cream– don’t worry, it tastes just fine) 🙂
  • Olives
  • Salsa
  • Chopped tomatoes
  • Avocado
  • Cilantro

Directions:

  1. Combine all the ingredients from first list – except 4 ounces of shredded cheese and 1 cup of chicken broth – in a 4 to 5-quart slow cooker.
  2. Add the remaining broth and shredded cheese over the ingredients.
  3. Cover with a lid and cook on LOW for 6 to 8 hours or on HIGH for 4 hours, or until the quinoa is fully cooked.
  4. Enjoy and serve with your favorite toppings!

Loaded Steak Nachos

If you know me, you know I am slightly addicted to nachos!! I just can’t help myself sometimes!! So today I was in the mood, but instead of going and having a big cheat, I decided to make a healthier, cleaner version of my steak nachos!!

PS.. This takes about 5 minutes to make if you go George Foreman route!

Ingredients:

  • 2 cups organic blue corn tortilla chips
  • 2 cups lean steak cubes (I cooked on George Foreman)
  • 1/4 cup fresh salsa
  • 1/4 cup fresh guacamole (purchase at the grocery store or make your own! CLICK for home made guacamole recipe)
  • 1/8 cup jalepenos
  • 1/8 cup Plain Greek Yogurt- Use this as a healthy alternative for sour cream!

Directions:

  1. Place chips on bottom of plate
  2. Add ingredients according to how you like
  3. ENJOY!!

Homemade Guacamole

Ok so as weird as this sounds, I was never a fan of Avocados… I know most people love them and they are so healthy, but for some reason, I have a hard time with the texture! I literally have had them 2 times, which was during my 21 Day Ultimate Reset! It was a very strict plan, so I was limited on what foods I could eat, so it was included in my salads, but would never eat it alone!
It was not until another co-worker of mine who is an amazing cook, brought in this green dip…Everyone was going crazy over how “amazing” it was, but the color and texture turned me away.. All day long, I kept hearing all about this Guacamole dip, so I decided to taste just a little bit! I took 1 scoop and added it to my brown rice and lean turkey burger.  I was completely blown away! That may have been a bite from heaven lol! I could not believe this entire time I was so opposed to Avocados, but really I just needed a good recipe with it!
So here it was! The most amazing dip I ever had… AND IT WAS HEALTHY!! Anytime I have a dip and it taste good, its usually not a healthy recipe.

HOME MADE GUACAMOLE DIP

Ingredients:

3 Avocados
1 large lime
3 roma tomatoes (chopped)
1 small onion (chopped)
2/3 pint of plain Greek yogurt
1 small bunch cilantro (chopped)
1 packet hidden valley ranch fiesta dip
A few shakes of Chipotle tobasco sauce
Directions:

Add avocados, Greek yogurt,  cilantro, ranch dip, onion, and tobasco sauce into a food grinder ( I use a Ninja). 

Add chopped tomatoes and mix. 
Squeeze 1 lime on top (will help keep its color longer).
If you want the dip to maintain its color longer, the less air that touches the avocado, the longer it will stay green.  You can cover the dip with a pastic wrap and refrigerate.
* Serve with whole wheat pita chips or your favorite snack/dinner!
