Healthy Prep for the Holidays!

I cannot believe Christmas is just right around the corner!!! Crazy!!! I feel like this year went WAYYYY too fast!! Anyways.. this season is a season that people seem to fall off track with their nutrition.. they go for the cookies, rather than the healthier dishes and snacks.  I won’t lie, I am guilty of it too at times! But for the most part, I love cooking up some healthier versions of dishes so I do not feel guilty and bloated at the end of the day!

Today I went out and got some Brussel spouts to prepare a dish for our Christmas meal! If you have read any of my blog posts before, I am a HUGE fan of spice! So these bad boys are gonna be a little sweet and a little spicy!!

Sweet Chili Brussel Sprouts

Ingredients:

1 pound brussels sprouts, stem trimmed and halved
2 tablespoons extra virgin olive oil
2 garlic cloves, finely minced
2 teaspoons soy sauce (I use Bragg’s liquid Amino as a healthy alternative)
2 tablespoons chili sauce (I use Sriracha brand)

Directions:

  1. Heat oven to 400 degrees.
  2. In baking sheet, toss brussel sprouts in olive oil to coat evenly.
  3. Roast in oven for 20 minutes, turning them half way to cook through.
  4. Remove sprouts and turn oven on broil to high.
  5. In a small bowl, whisk together the remaining ingredients and pour over sprouts, mixing to coat evenly.
  6. Broil for 5 min or until sauce is caramelized.
  7. Remove and serve when cooled off a little!

Getting FIT for Christmas and the New Year!!

Can you believe we are 12 days away from Christmas?? Which means we are getting closer to a New Year full of crazy new opportunities!!! I don’t know about you, but I’m pretty pumped about it!! This year has been crazy which life situations occurring that was not expecting, along changes that I had to accept and make some lifestyle changes!! I feel like many of us can vouch for having a crazy life and things have held us back from staying on track with our health and nutrition.

But guess what?! Let’s move forward NO MATTER WHAT and not let anything get in our way of our goals!! WHY?? Because at the end of the day, your health matters, your happiness matters, and how you feel about yourself matters and if you do not do anything about it, your going to be in the same situation you are in now! So time to make a change!!!!

This week, I am right on track with my nutrition… I am dialed in, meals prepped, meal plan ready, and ready to take another step closer to my goals!

With my meal plan  I made this week, I am pumped to add 4 new recipes here, 2 of which I am sharing today with you at the bottom!!

I will be doing my Hammer and Chisel workouts to finish off the last 2 weeks before showing my results of my 60 days. I am excited, but also am a little disappointed that I was not consistent with my nutrition for 2 of the weeks which set me back a good bit. But, I am failing forward and moving on!! No matter what, I am sharing my results and reminding myself this is all a journey!!! I share the good, the bad, and the ugly!

Ok, now for the recipes!!

Chicken, Artichoke, Sun-dried Tomato, and Brown Rice Bake:

Ingredients:

  • 1 lb boneless chicken breasts
  • 2 cups uncooked brown rice
  • 1/4 cup sun dried tomatoes (chopped)
  • 1/4 cup artichokes (I got them in a jar with olive oil)
  • 2 cups watermeal prep, meal planning, healthy eating meal prep, Deidra Penrose, healthy holiday tips, easy chicken bake recipes, weight loss challenge, new years resolution healthy 2017, fit for holiday challenge, elite beachbody coach PA, online personal fitness coach
  • Extra Virgin Olive Oil
  • Pepper and Himalayan salt to taste

Directions:

  1. Pre-heat oven at 350 F.
  2. Use Extra virgin olive oil just enough to wet bottom of small square baking dish (I take napkin and cover bottom)
  3. Add brown rice to bottom of dish
  4. Place Chicken on top of brown rice
  5. Add Artichoke and Sun-dried tomatoes
  6. Drizzle Extra Virgin Olive Oil
  7. Add 2 cups water to dish
  8. Bake for 45 Min or until Chicken is fully cooked
  9. Let cool before eating

 

Salsa Chicken and Brown Rice Bake

Ingredients:

  • 1 lb boneless chicken breast

  • 1 cup fresh salsa
  • 1 1/2 cup water
  • Spray pam or olive oil

Directions:

  1. Pre-heat oven to 350 F
  2. Spray bottom of square baking dish with Pam or olive oil spray
  3. Add brown rice to bottom of pan
  4. Add chicken breasts
  5. Add water
  6. Add salsa on top
  7. Bake for 45 min or until chicken is cooked thoroughly
  8. Cool before digging in!
  9. Enjoy

These recipes are so easy to make and prep, and I love making these in bulk so I have have enough throughout the week and I save time meal prepping and money at the grocery store!

I am so excited to finish this year right and start off 2017 healthy and strong!!

WHAT IS THE BEACHBODY HEALTH BET?

Beachbody is the organization I work with as a fitness coach. I have been a personal fitness coach now for 4 years and in the past was a personal trainer at a gym. I have found so much joy working with people on a daily basis and not having to only stick with people in the town I live in.. I get to help others all over the US and Canada!

So… the Health Bet Challenge was initiated by our CEO of Beachbody who is obsessed with changing lives!! That’s right… 2 Million is the MINIMUM that we are promising and will go up to $3 Million. The amount of money you will win will depend on how many people sign up and be consistent on their fitness journey!

HOW DO YOU QUALIFY FOR THE HEALTH BET CHALLENGE?

  • Each participant will be required to sign up with a Beachbody account and use a program of your choice (as your coach, I will help you find one that works best for you) and incorporate Shakeology, our superfood health drink, as 1 meal per day to give you the best nutrition!
  • Each participant will be required to join our Challenge Group Tracker App (free on your phone that I will help you set up as your coach). This will give you ability yo get daily support, motivation, fitness/nutrition tips, and a chance to WIN more PRIZES individually!
  • Each participant will be required to commit and log in at LEAST
    • 3 workouts per week
    • 5 Shakeology posts a week with a picture that you are drinking it
      • Each week runs Monday through Sunday at midnight
  • Each participant will be required by ME to keep track of their pictures and measurements (best way to track your progress along your journey) to help you stay motivated and accountable!

Staying In Shape At Home with Kids: Home-made Obstacle Course!

Alright, so here’s the deal… I got kids (boys), and they are a little crazy! If you are a mom of boys, you probably know where I’m coming from!

I need to get my workout in, and they like to interrupt, get in my way during my workout, and more. But one thing I refuse to do is let that STOP me from working out and reaching my goals!

Instead, I turn it into something fun!! So here it is! This should have been posted yesterday instead of today, but better late than never right?! This was yesterday morning (Wednesday) and our family workout…. an OBSTACLE COURSE!!!! Yea buddy!!

I gave them instructions, I make them crawl, jump, and lift! They love the challenge, and drill sergeant mommy (me) is also getting a workout while watching these rug-rats go crazy and stay active at the same time!! So much better than playing on the iPad or watching TV (sometimes its really hard to peel them away from these items).

Come on, doesn’t this look fun for everyone?! Quality time, exercise, and showing them what a healthy lifestyle looks like all in one!!!

So here you go… just another page of our story to share and my secret to getting my boys to exercise with me is out! If you have not tried this yet, give it a go!! It is actually lots of fun and challenging… especially when mommy tries fitting under the kids table doing army crawl!! HAHAHA!!!

How To Find Motivation To Start Your Fitness Journey

Sometimes its easier said than done to just get up and start your fitness journey.. As moms, we are busy, we have a million things to do, and we tend to put ourselves and our needs last!
