Surviving the Holidays- Staying on Track with your Fitness Goals!

I won’t lie, it’s not always easy to stay on track with your exercise and especially nutrition during the holidays… BUT.. I also won’t say it’s impossible to stay on track and even get closer to your goals!!

You do not have to be the average person who gains 5-10 pounds over the holidays… be the person who is committed, dedicated to their goals, and ready to get that fit and tone body they have been wanting!!  Letting 1 day of excessive eating, partying, and falling off track can easily lead to a complete falling off the wagon type of deal… and I do not want that for you.. 

My goal now is to help YOU stay accountable and on track on your fitness journey while getting though the holidays! Now, I am not saying to make yourself feel like your in jail, I am saying, treat yourself a little, but remember the real meaning of Thanksgiving!! Celebrate with family and friends, and remember all the blessings we were given!! 

So…. here we go… I am going to be giving you my top 3 HEALTHY RECIPES to use for Thanksgiving… these are replacements of what you would normally eat, but now we’re working on keeping you on track!

Who doesn’t love a little stuffing on Thanksgiving?!? Although it is one of my favorites, I know it has a TON of carbs, fat, and extras that is not so great for us and does not make us feel so great after were done eating. So this is your healthy alternative of stuffing that you can have without the guilt, bloating, and having to unzip those jeans!! Yup, you heard me, I know many of you do it just as I did!!

#2. Sweet Potato Casserole

Ok we love potatoes and carbs right?!? You can still have them, but be sure to portion them out, and go the healthy route!! Sweet potatoes are a better option rather than white potatoes where they are full of refined carbs where they turn into sugar in excessive amounts rather than used as energy.

Ok we can’t go without the turkey right?! Add tons of herbs, and instead of frying that turkey (yes, it tastes good, but is it healthy lol?) roast that bad boy up and call it a day!! 

Now I want to share a video with you from one of my favorite trainers Autumn Calabrese who is the creator of the 21 DAY FIX, FIX EXTEME, and upcoming brand new release HAMMER and CHISEL! She has created these color coded containers for a purpose.. and this purpose has been very successful to her, my self, and many others who are making their nutrition and fitness a priority!!

Ok so who is ready to rock this week and make this a successful and healthy holiday?! I am and I know if you keep in mind WHY you are doing this… WHY this healthy journey is important to you, you will find a way to stay motivated!!
HOW TO STAY MOTIVATED DURING TEMPTATIONS:
  1. Keep a motivational picture or quote on your phone (make it the background).
  2. Have an accountability group, partner, or friend to check in with throughout each day.
  3. Drink LOTS of water through out the day!
  4. Get your workouts in early every day! This gives you NO excuse to skip out before you get too busy!
  5. PORTION CONTROL- Everything in moderation!! 3 Bite rule I live by.. Take 3 bites and walk away! That way you are not starving yourself and feeling like you are in food jail!

Herb Roasted Thanksgiving Turkey

You can’t do Thanksgiving without a turkey, right?!? Instead of frying a turkey which sounds really good, but not so healthy, I am going to give you a healthy alternative so you can stay on track for the holidays and continue moving forward with your fitness goals instead of backtracking and then living with the bloat and guilt afterwards!
Herb Roasted Thanksgiving Turkey

Ingredients:
  • 1 turkey (about 12 pounds), thawed if frozen, rinsed and patted dry 
  • 1/2 cup chopped parsley 
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh sage leaves 
  • 1 1/2 teaspoons chopped fresh thyme leaves 
  • 8 cloves garlic, finely chopped (3 tablespoons) 
  • 5 tablespoons Extra virgin olive oil 
  • Coarse salt and ground pepper 
  • 2 lemons, poked all over with a fork 
  • 1 quart apple cider
Directions:
Preheat oven to 350 degrees with rack in lowest position. Remove packet of giblets and neck from cavity. Discard liver. Rinse remaining giblets and neck; refrigerate until ready to make broth. 
Turn turkey on its back and bend wing tips forward and underneath neck cavity of bird so they stay in place (you may have to break the bones).
In a small bowl, combine parsley, rosemary, sage, thyme, garlic, 4 tablespoons oil, 1 teaspoon Himalayan salt, and 1/2 teaspoon pepper. Using your fingers, carefully loosen skin of breast and around thighs and rub herb mixture under skin of both. 
Season cavity with salt and pepper and loosely fill with lemons and rosemary sprigs. Using cotton kitchen twine, tie legs together so bird retains its shape and moisture during cooking.
Pour cider in bottom of pan. Set roasting rack on top. Lift turkey onto rack, breast side up; rub with remaining tablespoon oil; season generously with salt and pepper. Tent turkey loosely with foil. Roast 1 hour. Uncover and continue to roast, basting frequently with pan juices, until an instant read thermometer inserted into thickest part of thigh (avoiding bone) registers 170 degrees, 2 1/2 to 3 hours more.  Top off with foil if browning too quickly; add water if pan becomes dry. Cover loosely with foil, and let stand 30 minutes before carving. 
Serve with your favorite vegetables and potatoes!

Crock Pot Sweet Potato Casserole

Sweet potatoes are yummy right?? Its a great treat to have for the holidays, but what about changing it up a bit and turning it into a yummy casserole? You literally just throw the ingredients in and walk away until its finished!! Thats my kind of recipe right there!!

Ingredients:
5-7 sweet potatoes, peeled and cut into small cubes
1 cup unsweetened applesauce
1/3 cup packed light brown sugar
2 TBSP Extra Virgin Olive Oil1 1/2 teaspoon cinnamon
1/2 cup toasted pecans

Directions:

  1. In a small mixing bowl, stir applesauce, light brown sugar, EVOO, and cinnamon together. 
  2. Lay sweet potatoes in the bottom of a slow cooker. 
  3. Pour applesauce mixture over potatoes. 
  4. Cover and cook on low until potatoes are tender, about 6-8 hours. 
  5. Blend potatoes in a mixer until nice and smooth. Sprinkle with nuts and serve.

Hope you can use this recipe for a nice family holiday dinner, and more!! 
Always remember to use portion sizes and drink lots of water to stay full longer!!

Beachbody Dream Team Elite Retreat Weekend Recap

 This weekend was seriously amazing… I can say I have been on a bunch of trips now with our team and company, and this was one of the best! The Dream Team is the #1 team in the entire Beachbody organization… I was blessed to be brought on this team 3 years ago and it has been such an incredible experience thus far!! Over the past 2 years, I have been an Elite coach myself (this year is going to be my 3rd), and being able to go on at least 4 trips a year and spending time with these mommies and amazing friends who lift you up is just so much fun and such a blessing!

Friday was the start of our weekend retreat in Bedford, PA at the Omni Bedford Springs Spa and Resort and I almost didn’t go.. I was so ridiculously sick the Thursday night into Friday and had strep.. I literally took way too many Advil and Naproxen, couldn’t even eat but drank lots of green tea, and slept what felt like my life away.   I did what I needed to to feel better and although I was pretty miserable at first, I sucked it up because I knew the experience would be worth it!! And it was of course!!

We had the privilege of having Jeremy Redd from Corporate to our retreat to give us some of the top training! He works with the 15 star diamonds (the highest rank you can get), and since I’m not quite at 15 and hanging at 12, it was really nice to hear from him and get some training and advice! 
We got in and had a nice dinner together and then went up and relaxed and caught up!
Got a pretty awesome gift from Melanie to use for the weekend….  

 We got to our room and we had a beautiful suite that looked over the mountains!  AHH it was such a beautiful view!! We had some pretty awesome PJ’s and VS perfume waiting on our beds for us from Melanie!! Sorry I couldn’t even wait to take a pic because we hurried up and put those bad boys on and went at it taking pictures and having a good time!! 🙂   But heres what they looked like:

Saturday morning came and we still do our thang.. wake up nice and early, and do our check in’s, look in our challenge groups, and get our posts in!! Starting our day early is what makes us feel successful throughout the rest of the day!! That’s just us!!

First things first, WERK OUT with my girl Katy!

Now, nothing else can be done before we get in a good ol werkout!!!  Did a little back n bi’s and cardio with Katy!! Its so much fun having a workout buddy!! If you are wanting accountability, find someone who motivates and inspires you and team up to help each other!! We kinda rocked that workout by the way!

Morning at the Spa for massages and pools for a little relaxation and quality time!
Post workout means SPA TIME!! Thats right… time to relax our body, mind, and spirit!! Enjoy what we have and release the stress and tension!! Everyone has a different kind of stress, so if you ever have the opportunity to give yourself a little “YOU” time, its important and will help so much!!! 
After our spa, we all had a nice lunch together and of course we kept it pretty clean!! Im still wondering who brought those chocolate chip cookies though lol!! 
Once we had lunch, we had our training with Jeremy for 2 hours and then we each had 1:1 sessions with him to help us individually with our own businesses.

Sunday was our last morning there before we headed back to our families and kids!! But before we left, we had a nice little private yoga session!!! It was nice, sorta relaxing… ok the moves get tough and having to hold them is not always comfortable lol!!

Overall, this weekend was a blast… again, one of the best experiences and so blessed to have these experiences I have so far!! 
From a full time ER nurse, to living life by design, working from home doing what I love.. my passion, helping others with their health and fitness goals and continuing my own fitness journey! Its a win win… I make my own hours, I am with my kids all the time and not missing out on any memories, providing us with freedom financially and with being able to travel, and the people I have met and relationships built is simply amazing!!!

Healthy Holiday Stuffing Recipe

The holiday is right around the corner, and I personally know how easy it is to fall off track with your nutrition…. I mean come on, the food is EVERYWHERE!! 

But it’s time to stop thinking the holiday is all about eating as much food as you can and focus on the real meaning of the holidays!! Let’s focus on being thankful and surrounding ourselves around our families!!!

Ok, so yea, there is still food everywhere lol… but instead of being like the “average people who gain 5 lbs minimum over the holidays”, lets be the over achievers who make healthy alternatives to still enjoy the holiday but stay on track and feel amazing after eating!!  

Seriously, I feel like people think its mandatory to have a food baby after eating Thanksgiving and Christmas dinner lol!!  IT’S NOT mandatory, I promise!!!! 🙂

Healthy Holiday Stuffing

INGREDIENTS:

  1. 1 cup low-sodium chicken broth
  2. 1 cup chopped celery
  3. 1/2 cup chopped onion
  4. 10 slices whole-wheat bread, toasted and cut into cubes
  5. 1/4 cup chopped parsley
  6. 1/2 teaspoon paprika
  7. 1/8 teaspoon ground nutmeg
  8. 1/2 cup chopped fresh cranberries
  9. 1 cup chopped walnuts

DIRECTIONS:

  1. Heat the oven to 350 F. Lightly coat a 2-quart baking dish with cooking spray.
  2. In a large skillet, heat the chicken broth over medium heat. Add the celery and onion and saute until the vegetables are tender, about 5 minutes. Remove from heat. 
  3. In a large bowl, combine the bread cubes, parsley, paprika, nutmeg, cranberries, and  walnuts. Add the onion and celery mixture. Stir to mix evenly.
  4. Spoon stuffing into the prepared baking dish. Cover with aluminum foil and bake for 20 minutes. Uncover and bake 10 more minutes. Serve immediately.
  5. ENJOY!!

3 Years ago, I was working full time as an ER nurse, taking my Master’s classes to be a School Nurse, and taking care of my little boy who was 12 weeks old and 1 year old.  I needed a change and something to get out of the crazy swing shifts and working weekends and holidays, so I decided to go with my gut and take a leap of faith.

Sometimes a leap of faith is scary, especially since humans naturally fear the unknown and fear change.  But I knew the current situation in my life I was in, I was not happy.  Taking that leap was the best thing I could have ever done for myself, and my boys!  I was taking a leap for freedom both physically (for myself and being a good role model for my boys) and financially.

Physical Freedom- After my second baby, the weight wasn’t falling off like the first, I was depressed, uncomfortable, and insecure with my body.  I officially had the “mommy body”… not fun… Never wanted to say I had that, but I did.   But shortly after realizing how miserable I was, I was able to start my new fitness journey with Beachbody.
I started my journey with Insanity (yes, I picked the most intense workout possible lol) and Shakeology, which is our health shake full of dense nutrition and superfoods to help curb those crazy cravings, increase your energy (naturally), and improve your digestion! You can just say I instantly fell in love!  I literally felt so different in just 2 weeks of my journey and new this was the change I needed for myself and my health.
After completing Insanity and Turbo Fire, I knew I wanted to do more than help myself.. I wanted to help others who felt the way I did.. I wanted to help them realize there is another part that was missing.. the opportunity to feel confident, fit, and energetic!  That was when I took my leap of faith as a Fitness Coach with Beachbody!
As I was a coach, I was able to keep myself more accountable to continue my fitness journey and was able to reach my ultimate fitness and health goals 9 months later!  I had abs… something I NEVER had before and never thought was possible, especially after kids!
Currently, I still use my challenge groups (support groups online where I work 1:1 with my customers to help them reach their goals) as my own accountability and show I am still on my own journey!

Financial Freedom- Before Beachbody, I was a nurse, making decent money, but not enough that I was able to save and put away for my children’s school, go on vacations more than 1 time a year, and support them in the way I wanted to be able to support them.
The first month I started working as a fitness coach, I was able to make $677! To me, this was exciting!! Working 7 hours a week and making this just by doing what I love?? Helping people and sharing my journey?!?
YES PLEASE!!! This was like a career that I always could dream of but didn’t think it was possible to have something that fit me and my lifestyle so much!  Well folks,  I have good news… ITS REAL!!!
People who love fitness tend to go right to personal training… nothing wrong with that at all!! BUT… this is just another or additional opportunity to help others from more than just your area.. we help people from all over the US and CANADA (we are working on going international don’t worry)!
As I have been able to reach out to people from all over, I have grown my business to be in the top 1% of the entire organization!! Whats even cooler???
Our team has been in the top 1% of the organization since my first year of coaching!  So the past 2 years, we’ve actually been in the top 0.5% of the company!
This means amazing training, more opportunity for success and freedom!!
To sum it up, financially, I have been able to provide more for my boys than I ever have! I am making what I do as a full time ER Nurse in 1 year, in just 3 months (or less)! Thats right! I have more than tripled my yearly income and I can confidently tell you that YOU can do the same IF your passion is there!

Who doesn’t like Girl Scout Cookies?!?! Seriously, they are amazing, tasty, yet after you eat them, you feel bloated and yucky and guilty!  That’s unfortunate right?!  

Well, fortunately, I have found something that seriously replaces that guilty feeling and tastes just as yummy!  A clean, healthy alternative is just the trick!

SAMOA GIRL SCOUT COOKIE SHAKEOLOGY

Ingredients & Directions

4 oz vanilla unsweetened almond milk
4 oz water (you should have this one lol)
1 scoop chocolate Shakeology
1 tbsp unsweetened shredded coconut
1/2 caramel extract
Ice
Blend!
Its that easy!! Nutrition does not have to be difficult!! Make it simple, healthy, and convenient!!

Peanut Butter Banana Bread

Ingredients:

  • 4 ripe bananas, peeled
  • 4 eggs, yolk and white
  • 1/2 c coconut flour
  • 1/2 c natural peanut butter (I use Jif or Skippy)
  • 3 TBSP unsweetened applesauce
  • 1 TBSP organic coconut oil, melted
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp pure vanilla extract
  • 1/2 tsp cinnamon
Directions:
  1. Preheat oven to 350 degrees F. 
  2. Using a paper towel and a small amount of coconut oil, grease loaf pan. 
  3. Combine all ingredients into a mixer and mix for approximately 1 minute.
  4. Pour batter into loaf pan. 
  5. Bake for approximately 45 minutes at 350 degrees F. Allow loaf to cool 5 minutes prior to slicing and serving. 
  6. ENJOY!

Healthy Crock Pot Apple Crisp

Its that time of year again, fall is here and its always nice to make those yummy warm crock pot treats!!! I actually just picked up some more fresh apples from the local farmers market before they close down and now that I know we are known for our apples, I am putting them to use!!

Healthy Crock Pot Apple Crisp

Ingredients:(Makes 8 servings)
  • 8 Medium Apples (Granny Smith)
  • 3 Tbsp cinnamon
  • 1 Tsp nutmeg
  • 1/8 cup 100% Pure Maple Syrup
  • 2 cups instant oatmeal
  • 1/4 cup light brown sugar
  • 4 ounces pure apple juice
Directions:
  1. Slice and peel apples (removing the cores) and place them in crock pot
  2. Add 2 Tbsp cinnamon, 1/2 tsp nutmeg, and pure maple syrup and mix well
  3. In a separate bowl, add oatmeal, the remaining cinnamon and nutmeg, brown sugar, and apple juice and mix.
  4. Add oatmeal mixture to apples by placing them on top.
  5. Cook on low for 10 hours.
21 DAY FIX Breakdown:
1 RED
1 YELLOW
1 PURPLE
2 TSP
