Roasted Asparagus with Balsamic Vinegar

Since prepping for my NPC Figure show, I am eating a TON of asparagus.  Im not sure if a ton even gives it justice lol.  So, I decided to take my asparagus to a new level!! I am a big fan of balsamic vinegar, so figured, why not soak my asparagus in it and throw it all in the oven?! Not to mention, garlic makes me happy too, so of course that will go in my recipe as well!! Would love you to comment below if you try it, let me know how you like! 🙂

Ingredients:

  • 2 Stalks Fresh Asparagus
  • 1 tbsp minced garlic
  • 3 tbsp Balsamic vinegar
  • Dash of pepper to taste
  • Extra Virgin Olive Oil spray
Directions:
  1. Preheat oven to 350 degrees F.
  2. Cut off stems of asparagus 
  3. Spray Baking dish with EVOO spray so it just covers bottom of dish
  4. Add asparagus to dish
  5. Add minced garlic, pepper, and 2 of the 3 tbsp of vinegar and mixed so mixture is throughout asparagus
  6. Bake for 15 minutes
  7. Drizzle rest of vinegar and enjoy!

Retired Nurse at 29- Pursue Fitness as My New Career!

Today was seriously one of the biggest days, most scary days, and emotional days I’ve had in quite a while.. Today was the day I made a HUGE decision to take that leap of faith and make my dreams become reality!! As we all think about what we would love to do for a living… something that we could say “If I could have this job, I wouldn’t even need to get paid I love it so much?” kinda job?? Well, I have found that and I am so beyond excited to announce my BIG leap of faith I took today!!

As an ER nurse for 6 years, it was my first job and only job Iv’e had coming right out of nursing school, I LOVE helping people, and working in the ER just gave me that rush… kept my adrenaline going and felt like I was doing something good in life!  My only downfall I can honestly say is difficult working as an ER nurse, or any nurse in the hospital at that, is the scheduling and those holidays, weekends, swing shifts, and having kids does not always go well with this schedule! I know many do it, but they DEAL with it.. I don’t want to settle… I want to see my kids grow, be at their events in school and after school if I need to.  Which is WHY I took a leap of faith 2 years ago which started my entire journey with Beachbody!

After having my 2nd son, I was unhappy, uncomfortable in my own skin, and very self conscious. I needed the change.. both physically and mentally.  I wanted to be that confident woman who held her head high, but I became that mom who was embarrassed to even exercise because of everything giggling on me. As I spoke with my cousin who was a Beachbody coach, she asked me if I wanted to join her challenge group and do any workout program of my choice, along with drinking this SHAKEOLOGY drink daily and in the group, I would get daily support and accountability to reach my fitness goals.  At that time, I was skeptical.. I have tried DIETS before… and I am knowledgeable enough to know THEY DONT WORK! BUT… I saw my cousins transformation and she did not diet, she made it a lifestyle.  That is exactly what I wanted!!  I wanted to not only change for myself, but be that role model for my family!  

As I started my own fitness journey, I began seeing great results with using INSANITY and SHAKEOLOGY and people saw what I was doing.  I shared my journey on Facebook, to my family and friends and since I love helping people, I figured, hey, if I can motivate and help another person feel better about themselves, WHY NOT show what Im doing?!?

Literally 2 months later, I became a Beachbody coach myself. I knew what I was doing is not going to be temporary.. I wanted this for the long haul. There is NO giving up here and I wanted to help others more and more! Although being a nurse and in school taking masters classes with 2 young children, I figured if I can squeeze an hour here and there to help someone else, its totally worth it! 

It became so much more than that… It became more than a hobby.  Being a fitness coach and doing this job at home was just another way to keep myself accountable, my kids to see mommy being healthy, and meeting new people and helping them from all over the US and Canada! Pretty amazing stuff!! To make it even better, I don’t have to sell a darn thing!! All I did was share what I was doing and what is working for me and my fellow coaches and challengers!! 

Some of the best moments being a coach are those messages saying “Thank you for changing my life.”  “Thank you for your post this morning, you motivated me to workout.”  and even those messages where their health is improving because they are eating clean, learning new recipes from me, getting support and accountability from me, and that darn SHAKEOLOGY… “is that a miracle drink or what?” I say it is… because I never believed in those drinky shakes… lol… Ive done the GNC… but this is a meal that I have finally gotten everything I need.. All my dense nutrients, super foods, and multivitamins… Oh and NO ARTIFICIAL SWEETENERS!! Yes, its my miracle drink!! Moreso that I can make ice cream and no bake cookies, but thats another story lol!!

Ok, so moving forward… as I continued my journey and helping others as a fitness coach with Beachbody, I just found a passion and love that I never found before with anything else.. I wake up excited to work.. I stay up late to work because sometimes, I can’t get enough. Can many people say that about their job? Its addicting to be healthy and help others and when you have that momentum going, you don’t want to stop!! 

Last year, 1 year into my coaching career, I was able to make up my nursing income and took a leap of faith and went  Relief as a nurse.  I told myself I would NEVER quit my nursing career-  I went to school way to long to give it up.  So I continued making it work.. Nursing, coaching, kids, wife, ya know, living the life!! Its been an amazing year and my team was able to make our way to the top 1% in the company and come an Elite coach! Pretty impressive from my standpoint with all I had going on!! Building a team of moms, dads, nurses, teachers, etc who love to do what I do is just amazing!! We’ve made a bond that is like no other! Our extended family I call it!

As this past year went by being a nurse and fitness coach, along with taking on the mommy role, I realized how amazing it was to not have to work all the holidays and weekends, but it was still difficult having to find those few days a month to even schedule in the ER due to my husbands schedule, day care not being open in the evenings and weekends, and we do not have family that lives close enough to help us babysit.  On top of my schedule, I wanted to commit this year to spending more time with my boys… enrolling them in sports and getting them involved in as much as possible! This is MY time to cherish these moments that I missed out when I was working more in the ER as a nurse.  As I said, I want to be that mom who can go into school and bring in snacks, or help with events, and not miss a sporting event.  With my career as a Beachbody coach, I have this freedom!! I have enrolled both boys in gymnastics which are two separate days a week, and thats ok, because I have that flexibility! I can attend church every Sunday and not miss out because I work.  I can go to all my events and trainings for Beachbody to help my team and grow my business!! 

After lots of thinking, praying, and planning, I took my leap of faith and officially am retiring from my Nursing career! Although I said I would never do this, my heart is with my business, my challengers, and my coaches, and I want to provide that time to them, but also continue spending more quality time with my family!  I love being a nurse, but my passion will take me to bigger and better places in life!

 I am confident in my decision is best for my family and my business.  I am so grateful to have been blessed with the ability to go to school and earn my Bachelor’s Degree and School Nurse Certificate, but even more blessed that Beachbody has come into my life and changed it in so many ways! Never in a million years did I imagine retiring as a nurse anytime before the age of 60! lol Now, here I am, retiring from my nursing career 6 years into my career at the age of 29, all because of 2 years of hard work, dedication, and commitment to helping others as a fitness coach! Since coaching and reaching my health and fitness goals, I am now able to pursue my dreams for NPC Figure Competing and am training for my 2nd show! 

You never know what you can do with an opportunity until you take control of it!

Strawberry Shakeology Protein Squares- 21 Day fix Extreme Approved!

Strawberry Shakeology Protein Squares

Ingredients:
  • 2 cups old fashion oats
  • 4 scoops Strawberry Shakeology
  • 1/2 Natural Almond butter
  • 1/4 cup unsweetened almond milk (I use Vanilla)
Directions:

  1. Place oats and Shakeology in blender ( I use Ninja) and blend for 1 min.
  2. Add Almond butter and almond milk. Cover and blend for an additional minute or until it forms a wet dough.
  3. Place in 8X8 baking dish and press evenly around so bottom is covered.
  4. Refrigerate for 2 hours or until firm. Cut into 8 1 inch squares.
  5. ENJOY!
*Container Equivalents: Per serving
1/2 RED 
1/2 YELLOW
1/2 BLE

Fitness Lovers and Busy Moms build a Business with Fitness!

As a busy Momma, Nurse, Wife, and fitness lover who now has reached a huge goal training for NPC Figure Competitions, you would think there is no time left right?! I mean, we know as moms and dads how your kiddos take away most free time, especially getting into sports!  Well, as I started reaching my own health and fitness goals, I found it a priority to keep my health on top… I mean without my health, my kids will not have a mother and that they need!  It is my job to be a role model for them so they can learn those healthy habits young so when its time for them to make their own decisions, hopefully they choose the path they were taught by eating clean, exercising regularly rather than living a sedentary lifestyle which is so easy to pick up nowadays.

Since I’ve been keeping my health and fitness a priority, I have found such a passion for this lifestyle. Its not that Im obsessed, but I’ve become very dedicated and goal oriented and to me, thats a good thing! I will say, I would NOT be in this position if I wouldn’t have taken the leap of faith 2 years ago and start helping others while on my own journey!
As a nurse working swing shifts, weekends, and holidays, it becomes hard on your body and your emotions, especially when you start missing out on important events and holidays with your kids and family.  I decided, I need something that will fit my lifestyle more.  I want to be able to be home with my kids, watch them grow, and attend the school and sporting events without needing to switch shifts or call off.  The stress of having to even find a sitter when your spouse works the same shift and daycare is closed is bad enough.   
So my mind was so set on being that “average” nurse and mom who works that busy job and misses events was slowly making me think… “hey, I have been seeing what others do as fitness coaches with Beachbody as I’m working on my own journey, why NOT try it and go all in and see what I can do?”
As my family was totally against me taking a leap of faith and starting this ENTIRE NEW journey without knowing what could happen and risking my career as a nurse, I knew if I didn’t, then I would never know my potential and always be just average.   My passion for helping others was so much stronger than that, along with my passion for fitness.  
As I risked my nursing career, I did it… I went part time, and started working part time hours just sharing my Beachbody journey as I was doing the home fitness programs, drinking SHAKEOLOGY daily, and motivating others to live a healthy lifestyle!
As I realized there are ALWAYS people who will need help getting healthy, why not be one of those people to make their own schedule, work from home, but be able to follow these people’s journey as you help them? 
Why NOT make my own hours to work?
Why miss another holiday or important event for my kids?
Why NOT be limitless on my income for my family?  I mean, the more people you help, the more free you can be financially?? 
This is where my opportunity is given to YOU!

21 DAY FIX RESULTS ARE IN- MARIA B. (Personal Trainer and Fitness Lover)

Hey all!! Happy #transformationtuesday!! Ok, so I currently have a 2 step Challenge Group/Support Group for people looking to reach their health and fitness goals… When I talk about health and fitness goals, I’m talking losing 5 pounds, 10 pounds, 50 pounds, 100 pounds, or just tone!! No matter what your goals are, every person in these groups are looking to better themselves in one way or another! More importantly, these groups are not just about weight loss, its about building friendships with people that has similar goals and hobbies, making healthy choices and creating healthy lifestyles, and building your confidence as a person, mother, father, etc! 
One of my Challenge groups is a 21 DAY FIX EXTREME to the 21 DAY FIX EXTREME.  So we just finished the first part of this challenge of the 21 DAY FIX!  One thing I love about this group is these women and men are sharing all their successes and their struggles.  Since they have finished the 21 DAY FIX on Sunday, there are a ton of challengers that have made so many changes in just 21 days!!
Maria B. is a coach and challenger in particular that I want to talk about today!!! What is so different about Maria??
She is one of those women who is already is amazing shape, but was looking to tone a little and maintain her healthy body! As she is already a personal trainer at a huge gym in D.C., she has the knowledge and background with nutrition and exercise.  BUT…. can it hurt to do a little more?? Of course not!! That is WHY she found Team Beachbody and our programs, nutrition to be of value to her for her results! INSANITY MAX 30 is the home fitness program I used as my daily morning cardio.  I love being able to wake up first thing in the morning and get a good start to my day and burn some calories!  Nothing better than tricking your body right away so you don’t hit that plateau!

YUP, I’ll take that!!! Instead of focusing on those numbers on the scale, focus on the non-scale successes, which is exactly what I do in my fitness challenge groups!! If I didn’t take pictures and measurements, I would have been pretty disappointed by looking at the scale… Less than 1 lb a week…. BUT now that I have my pictures and measurements, I’m pretty excited about these results!! I am building muscle like I wanted, I am losing inches, and that is exactly what I needed for my Figure Competition!! 
WHAT HAS HELPED ME THE MOST WITH MY RESULTS?!
I feel nutrition is 80% of your results, no matter what you are going for.  It is important to meet your daily caloric intake, but also the right calories! I do include my health shake SHAKEOLOGY into my regimen 2 times a day because it is 1 meal I know I am getting the best nutrition possible! It is not always about the calories, its about the nutrients  you are taking in… having over 70 natural ingredients, your super foods, antioxidants, digestive enzymes, and more, my Shakeology has helped me stay on track but also helps regulate me, decreases my cravings, bloating, and helps with my energy level! A bonus is I am losing the artificial sweeteners and chemicals that are in majority of your regular every day foods and meals! 
I am now 7 weeks out from my show and I am continuing to use BODY BEAST as my weight training, and now using 21 DAY FIX EXTREME as my morning workout!! Time to keep moving forward, and kick butt these last 7 weeks!!! My suit is shipped out and on its way, I am signed up for my show, and will be making my appointment for tanning and hair and makeup!! EEEEK!!!! This is pretty darn exciting!!!

As I am 7 1/2 weeks out from my NPC figure competition, I am CRAVING Chinese food like no other!! I had company over for dinner and made my Clean Chicken Parmesan, so I made my own meal! I was trying to think of what I can use for a sauce that would replace a good fattening Chinese general Tsos sauce lol…. So off to the store I went!
Now I always use Braggs liquid Aminos on pretty much everything, but I wanted something to give it a twist. I am obsessed with The Sriracha sauce and when I was at the store looking at sauces, I came across this one that also makes the Sriracha! Ummm can you say SCORE?!?!!?  ;)- So Here is it! So easy and simple, but yet so YUMMY!

– 1 lb Chicken cubed
-1/2 bag frozen corn, peas, carrots, and green bean mix
-1 /4 cup Liquid Aminos
1 tbsp Chili Garlic Sauce (add more if you like a little kick!)
-1 cup cooked brown rice (cook according to box)
-2 egg whites

Directions:

  1. Cook Chicken cubes on stove on medium until cooked throughout (approx 20 min)
  2. On separate pan, add egg whites, 1/8 cup Braggs liquid Aminos,  and mixed veggies and cook on medium for 5-6 minutes (mixing every 2 minutes)  
  3. Add rest of Liquid Aminos and Chili sauce on chicken and cook for 5 more min on medium.
  4. Cook on low for 5 minutes.  
  5. Add Veggie mixture to chicken and stir.
  6. Add brown rice to plate and top off with chicken and veggie mix!
  7. ENJOY!

Ok, so some of you may think I am completely silly for this post, but as I was talking with a friend who is on her own weight loss journey/fitness journey with me got on the subject of our thighs touching.  She made a comment that hers always have touched and then I got to thinking how often I hear “I hate that my thighs touch” or “I wish my thighs wouldn’t touch and I would be skinny”. 

After thinking about it, I thought about how I say it all the time… “I wish my thighs wouldn’t rub together so I’m not having my shorts ride up!”… yup I said it and you females know EXACTLY what I’m talking about!

Then I was doing my morning cardio workout at home INSANITY MAX 30 (I love getting a good workout in first thing when I wake up when the kiddos are still sleeping) I realized that although my thighs touch, that does NOT mean I am over weight! In fact, I am 8 weeks out from an NPC Figure Competition and I have a good bit of muscle in those legs, but YES, they still touch!!  

I want to help you understand the importance of begin FIT vs SKINNY!  Now, our genetics totally play a role in our bodies to an extent, but it does NOT define who we are!! There is still 80% nutrition and 20% exercise to help you create how you look.

Our society has showed what the typical “skinny model figure” should look like.  Victorias secret models for instance… and I am NOT disrespecting them by any means because those women are absolutely gorgeous, BUT, our bodies are not meant to look like that on a normal day.  It is time to focus on what a HEALTHY LIFESTYLE looks like!

Yes, we have some curves, and our men love that! We can have curves and still have abs, tone legs, and arms. Its all on what you make it!  This is what I call a healthy lifestyle which is what I do to get to where I am today:
  • Clean eating- Skip the easy fast food and go for quality! Easy isn’t always the best! What we put in our bodies will show on the outside…. our body fat, our skin, etc.  
    • When I grocery shop, I shop ALWAYS on the outside isles and work my way in! The healthiest and cleanest foods is found there! 
    • Fresh fruits, fresh veggies, lean meats, then inside isles (you do NOT need to go down every isle!) you will find you Extra virgin olive oil (EVOO), coconut oil, seasonings (my cinnamon for my MAN CAKES), and natural PB!
  • Exercise 30 minutes min a day! I am not asking you to spend hours at the gym! In fact, the way I reached my goals to get to where I am today is based off of my home fitness programs with Team Beachbody!   Currently I am training for my 2nd Figure Competition and just finished INSANITY MAX 30 as my cardio and BODY BEAST for my weight training.  Now I am continuing Body Beast, but also incorporating the brand new 21 DAY FIX EXTREME which is a total body workout that is 30 minutes long and includes weights.  Having a variety of exercises will trick your body and continue increasing your metabolism and burn calories as you are working different muscle groups! This is what I do to keep myself from plateauing.  
  • SUPPORT- A huge part of my success comes from getting 1:1 support and motivation in my fitness challenge groups.  As a fitness coach and being on my own fitness journey after having my second child, I realized that this area is what got me to my goals.  It is what most people lack when they are on their journey and without support, many lose confidence, hope, and the ability to commit.  My groups are held in a closed group on Facebook so ONLY those challengers who are ready to commit have their spot with me so I can focus on each person to achieve their goals.

Once you have the nutrition, the exercise, and the support, you will create success!  Iv’e been through the journey myself as I said before, but have now helped hundreds of people with their journey as well and these transformations are not temporary, they are long term!  So here we go, throw out the diets, starving yourself and time to do it the right way!!

Spicy Tuna Steak Recipe

SPICY TUNA STEAK

Ingredients:
  • 4-5 Tuna Steaks
  • 1/4 cup Braggs Liquid Aminos (soy sauce replacement found in organic section)
  • 1/4 cup Extra virgin olive oil
  • 1 tbsp garlic powder
  • 1/2 lemon squeezed
  • 1 tsp chili powder
  • 1 tbsp oregano
  • 1 tbsp Parsley

Directions:
  1. Mix all ingredients together in a large zip lock bag and let marinade for 30 minutes at room temp or 2 hrs in refrigerator
  2. Turn on oven to Broil on high
  3. Place tuna steaks on large piece of foil and place in oven with door slightly open
  4. Cook until slightly brown on edges (approximately 8 minutes)
  5. Let cool before eating
  6. ENJOY!
