Pina Colada Shakeology

So here it is!! I have some vanilla Shakeology hanging around my pantry and since I am a huge Chocolate fan and use it pretty much every day, I felt it was time to change it up a little!!

This Pina Colada Shakeology was a hit tonight for our evening snack to help us from digging into unnecessary items in our fridge and pantry!

Ingredients:

  • 8-10 ice cubes
  • 4 oz water
  • 4 oz coconut milk
  • 1 scoop vanilla Shakeology
  • 1/4 cup crushed pineapple
  • 1 tbsp unsweetened shredded coconut

Directions:

  1. Mix all ingredients in a blender and blend for 30-45 seconds
  2. Top off with a sprinkled unsweetened shredded coconut
  3. ENJOY!!

Tuscan Garlic Chicken- Healthy Version

So we have all 5 kids with us for a few weeks and we are so excited to have everyone together!! This is by far the hardest part of having a blended family is the distance between my husband and his kids not seeing each other often, and it gets harder for me and the boys not seeing them a lot.  So while we are together, we are going to make the most of it!!

My goal is to have family dinner EVERY night between 5-6… so far, its day 2 and I am on a winning streak lol! On day 2, I decided to make something new because I had a bag of frozen chicken breasts and didn’t feel like making anything that I already had on my blog! So I did some researching and came up with a perfect meal!

So my kids (my oldest I should say) can be very picky… when they see green (spinach or kale), they get nervous lol… well, I thought, I am cooking for 7 people every day, they are going to eat what I make!!! lol

So as I made this meal, I was so proud! It looked amazing to me, and smelled sooooo good!! I had dinner on everyone’s plate and the big barn door table ready!! Kids came down and 2 of them threw a fit and said they didn’t like it… BEFORE TRYING IT! UMMMMM excuse me?!??!?! You didn’t even try it!!!!! Do any of you moms have to deal with this?!!? I mean come on already! Feeding 7 people and you can’t even try it?? So mommy got a defensive and the words that came out of my mouth were, “You are going to say you don’t like it and you have not even put it in your mouth yet? Are you aware of the thousands of kids who are in other countries and WISH they had this meal sitting in front of you who do not have the ability to eat anything? You are going to sit here and eat your food and if you decide not to, you will not eat the rest of the night.” Yup, I said it… that may be harsh, but I am NOT willing to cook more than 1 meal for a meal if you know what I mean!

So the 2 boys got scared of me lol… and changed there attitude… gave it a try and GUESS WHAT?!?!?!

4 of the 5 kids (2 kids who threw a fit are included in this 4) GOT SECONDS because it was so good!!!!!!

BOOM!!! And all you need to do is give it a shot!!!

Lol, so there is my story! A bag of chicken used, a box of gluten free pasta used…. and 2 servings of this sauce WAS COMPLETELY GONE after our dinner with a family of 7! Everyone made happy plates and they were pretty proud of themselves for making happy plates too!! PS. A happy plate is when they eat everything off their plates!! They look forward to saying they made this!

Ok, so let’s get to how to make this yummy dinner that tastes like your eating a Pasta from the Cheesecake factory or Olive Garden!

INGREDIENTS

  • 1½ pounds boneless skinless chicken breasts, thinly sliced
  • 2 Tablespoons extra virgin olive oil
  • 1 cup coconut milk (or if you don’t want the healthy version, you can use heavy cream, but you cannot taste coconut at all!)
  • ½ cup low sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ cup parmesan cheese
  • 1 cup spinach, chopped
  • 1 cup raw kale
  • ½ cup sun dried tomatoes

DIRECTIONS

  1. In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
  2. Add the coconut milk, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the sundried tomatoes and let it simmer . Add the raw spinach and kale to bottom of baking dish. Add chicken on top of spinach and kale and pour cream mix on top.
  3. Bake for 20 minutes.
  4. Let cool and you can enjoy with your favorite pasta! I used gluten free spaghetti from Aldi!

Peanut Butter Oatmeal Bake

I love making oatmeal bake recipes because they are so easy and perfect for the family or even if you have some company!

So I actually made this for my husband’s army crew that came back from a training recently and it was a hit! My kids even loved it and I have to be honest, they get a little picky when it comes to oatmeal recipes because they love the oatmeal in a packet!

PEANUT BUTTER OATMEAL BAKE

Ingredients:

  • 1 ½ cups quick cooking oats
  • 1 tsp baking powder
  • ½ tsp sea salt or Himalayan salt
  • 1 tsp ground cinnamon
  • 2 overripe bananas, mashed
  • ¼ cup creamy peanut butter (melted in microwave for 30 sec)
  • 1 tsp vanilla extract
  • ¼ cup pure maple syrup
  • 1 large egg, lightly beaten
  • ¾ cup unsweetened, vanilla almond milk or Fair life milk

Topping:

  • ¼ cup creamy natural peanut butter, melted

Directions:

  1. Preheat oven to 350 degrees F. Grease a 9×9” square baking pan and set aside.
  2. In a small bowl mix together the quick cooking oats, baking powder, salt and ground cinnamon. Set aside.
  3. In a large bowl mix mashed banana and peanut butter together until combined.
  4. Add in the vanilla extract, maple syrup and egg. Mix until combined.
  5. Add the milk and stir..
  6. Add dry ingredients to wet ingredients and mix thoroughly.
  7. Pour the mixture into a lightly greased 9×9” baking pan.
  8. Melt the extra peanut butter and drizzle on top. I use a knife to make swirls for extra decoration on top!
  9. Bake at 350 degrees for 25 minutes. Or until the top slightly springs back when touched and the edges are just barely brown!
  10. Cool before digging in! Dirty Red Beans and Rice

My hubby and I were making a meal plan for the week and were thinking of different recipes that we can have as a family! My hubs suggested I make “Dirty Red Beans and Rice”…. and I had NO idea what this was… so I did some research and it sounded pretty interesting! I found a recipe and then hubs decided to add something else.. Kielbasa!! So we went for it, and it turned out really really good!!!

  • 1 tbsp extra virgin olive oil
  • 1/2 white or purple onion, diced
  • 1 red bell pepper, diced
  • 1 cup brown rice cooked according to package
  • 1 package of turkey Kielbasa (chopped)
  • 1 tbsp cajun seasoning
  • 1 tsp garlic salt
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 (15oz.) can kidney beans, rinsed and drained

Directions

  1. Heat the olive oil in a large skillet over medium high heat. Cook Kielbasa for approx. 5 min or untilslightly brown on each side. Set aside
  2. Sauté the onion and red bell pepper for about 2 to 3 minutes, until they soften slightly.
  3. Add the rice, cajun seasoning and garlic powder, stirring until the rice is slightly browned, about 2 minutes.
  4. Pour in the tomato sauce and chicken broth and stir until combined. Bring mixture to a slight boil. Add beans, stir, then reduce heat to low. Cover the skillet and cook for 15  minutes, or until rice is tender. Stir to fluff the rice. Serve warm. Enjoy!

BBQ Turkey Meatloaf

Ingredients:

  • 1/2 lb lean turkey ground meat
  • 1/2 lb 90% lean ground beef (or 1 full lb of lean ground turkey meat)
  • ½ cup dry oatmeal
  • 1 tablespoon plus 2 teaspoons worcestershire sauce
  • 1 tablespoon dijon mustard
  • 4 tablespoons sugar free barbecue sauce (I use G Hughes from Walmart)
  • 1 tablespoon raw honey
  • 1/2 cup chopped onion
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

Directions:

  1. Preheat oven to 350 degrees F. In a large bowl, use your hands to mix together the ground turkey, beef, oats, 1 tablespoon of the worcestershire sauce, mustard, 3 tablespoons of the barbecue sauce, onion, the salt, and pepper.
  2. Shape the mixture into a long, thick log and place in an oiled baking dish. Be careful not to pack the meat too tightly or you’ll end up with a very dense, tough loaf.
  3. In a small bowl, whisk together the remaining 1 tablespoon barbecue sauce, the remaining 2 teaspoons worcestershire sauce, and the honey. Spread evenly over the meatloaf bake for 45 minutes. Slice and serve!

This is a recipe that is perfect for the kids and family!! I mean, who doesn’t love meatloaf?!?! And they wont even know it’s healthy!!

Crockpot Baked Ziti

Ingredients:

  • 2 (25 ounce) jars of pasta sauce
  • 15 oz tomato sauce
  • 1 pound UNCOOKED penne pasta (I used gluten free made with Quinoa from Aldi)
  • 1 lb lean ground beef
  • 1 lb lean ground turkey
  • 15 oz ricotta cheese
  • 2 eggs
  • 1 cup frozen chopped spinach
  • 1 cup of freshly grated parmesan cheese

Directions:

  1. Add both ground beef and turkey burger to large pan and cook on stove on medium high for 5 min (or until slightly pink- don’t worry, it will cook the rest of the way in the crock pot).
  2. Combine ricotta, eggs, and spinach in a bowl and stir well
  3. In a large bowl, combine both pasta sauces and tomato sauce together.
  4. Grate Parmesan cheese (I used around 2 cups) and set aside.
  5. Grease the inside of a 6 qt slow cooker (I used Olive oil spray but you can use whatever you have)
  6. Add 2⅓ cups of pasta sauce to the bottom of the slow cooker
  7. Add ⅓ of the uncooked penne.
  8. Dot on half of the ricotta mixture and spread out evenly.
  9. Add half of the Parmesan cheese (1/2 cup)
  10. Add another 2⅓ cups of sauce mixture
  11. Add an additional ⅓ of the uncooked penne.
  12. Dot on the remaining ricotta and spread out.
  13. Sprinkle on the remaining parmesan cheese (1/2 cup)
  14. Add the last ⅓ of the uncooked penne.
  15. Top with the remaining 2⅓ cups of sauce mixture
  16. Cover and cook on high for 2-3 hours, or until pasta is al dente (I found that toking on high for 2-3 hours helps prevent the noodles from getting too soggy)
  17. During the last few minutes, sprinkle with mozzarella cheese to the top and allow to melt
  18. Serve alone or topped with red pepper flakes and a side salad!
  19. Enjoy!

Taco Lasagna- Healthy Version

My kids have been asking for lasagna and I am trying hard to make good choices with food and stay healthy for this pregnancy, so I decided to make a different type of lasagna and have fun with it!

The kids LOVE soft tacos, so we took it to another level!

TACO LASAGNA IT IS!!!

Ingredients:
  • 1 lb lean ground meat
  • 1 lb lean turkey meat
  • 1/2 frozen bag corn (I use steam fresh)
  • 4 small whole wheat soft tacos
  • 1 can black beans (rinsed with water)
  • 1 packet low sodium taco seasoning
  • 2 cups shredded Colby cheese (or Mexican)
  • Greek yogurt (to top off)
  • Lettuce (to top off)
  • Tomatoes (to top off)
  • Avocado (to top off)

Directions:

  1. Pre-heat oven to 350 degrees.
  2. Cook both meats together in large pan for 5 min. Add taco seasoning and cook for 1 minute.
  3. Using a glass dish, layer ingredients accordingly:
    1. Bottom thin layer of meat
    2. Thin layer of corn
    3. Thin layer of black beans
    4. Thin layer of cheese
    5. 2 of the soft wraps (I cut 1 in half to cover the top)
  4. Repeat step 3 again.
  5. Bake in oven for 20 minutes
  6. Serve and enjoy with your favorite toppings!!
  • Plain Greek Yogurt replaces sour cream as a healthy alternative
  • Lettuce and tomato to top off

21 DAY FIX APPROVED:

1 red, 1 yellow

*If adding Greek Yogurt, 1/4 red, lettuce and tomato 1/2 green, 1/2 blue if adding avocado

Staying FIT during Pregnancy… with your SPOUSE!

I hope my hubby doesn’t get mad at me for this!!!!😳🙈🙈🙈🙈

But babe.. I’m doing this for US!!!

Here’s the deal:

➡️I haven’t shared my actual before pics until AFTER my results came… and lately, I haven’t had results because I don’t keep my own self accountable enough….

➡️We BOTH have struggled because we let excuses get in the way:

Moving, getting married, pregnant and restricted workouts, etc…

REALITY:

👉🏽If we are going to really do this the right way and the hard way, we need to share the day 1 all the way to the day 30 or 60, etc.. and showing the world before pictures is a great accountability for us!

👉🏽The excuses haven’t helped us get the results we want… it simply prolongs our success… so pregnant, married, moved in, still busy, blah blah blah… let’s friggin kick some booty and do this!!

So yup… here it goes!!

I’m giving you my stats since I started my JANUARY NEW YEAR FITNESS GOALS and where I stand today:

👉🏽weight in Jan- 146

👉🏽weight today- 150 … and yes I’m 12 weeks pregnant but I still had some fat to lose!

I’m up 3 inches with my measurements from Jan… mostly around my belly though 😜 which I’m ok with!!

But my point is to do this as a TEAM and also have a healthy pregnancy where I’m not gaining 60 unhealthy lbs again!!

Taking back old school to P90X3!! 30 days…. with good ol’ Tony Horton himself… rockin’ some pull ups, push ups, yoga, plyo, you name it!! ✌🏽

Day 1 P90X3 COMPLETE!!

Nutrition is all about protein control and making healthy choices!! When your pregnant, you only need 200 extra calories a day.. YOU ARE NOT EATING FOR 2!!! A fetus is NOT another person lol!!! Let’s stay focused and on track and know what is actual hunger and what is emotions and boredom!

So for me, when I’m craving my sweet and chocolate, my to-go is my Shakeology balls…. getting my nutrition but staying on track!!

Who doesn’t love sales and getting fit for summer all in one!?! I am a HUGE bargain person, so I thought I shouldn’t keep this to myself!!!

I know so many people say “being healthy is expensive”…. well, so is being unhealthy my friends!! McDonalds, Arby’s, or any fast food, restaurant, or junk food gets expensive! The difference is, you either can spend your money and invest in your health now, or waste your money on junk and get further away from your goals and then pay for doctor visits, medical expensive, and medication down the road! You pick! I pick to replace the unhealthy spending on reaching my goals and being the best I can be for myself and as a role model for my fam!!
